Drawing upon Jules Verne’s adventure novels, many of which were situated in Scotland, Gayle adopted the role of a traveller to distant and fantastical lands of aesthetic food ideals, non-aesthetic food and notions of waste, to explore what is in excess, left over from, seen as superfluous or discarded.
Working with Deans of Huntly, she developed a new artisan shortbread recipe using waste ingredients, and excess herbs from these allotments. She explored how waste can be reduced in domestic, artisanal and factory production.
The work is a digital collage, and text used during the sensory eating event.
