Food Chain: Mercimek Köftesi (Vegan Red Lentil Balls)
Join us for this digital cookery workshop and find out how Bürde Yılmaz - our Project Intern - makes mercimek föftesi (vegan red lentil balls), a traditional Turkish treat that will embellish your food tables for every occasion, or simply your lunch or dinner! With the red lentil and bulgur in it, this dish is both nutritious and freshly delicious with the parsley, scallions, and lemon juice. Bürde will be sharing her way of making these red lentil balls that take her back to her childhood, and her hometown.
Shopping list for you to cook along at home:
-1 cup of red lentils (approx. 170 gr.)
-1.25 cups of fine bulgur (approx. 190 gr.)
-3 cups of water
-1 normal size onion
-1 parsley bunch
-5 scallions
-Olive oil
-Concentrated tomato paste, see example product here
-Concentrated pepper paste (optional) see example products here (mild) and here (hot)
-Salt
-Cumin
-Flaked red pepper
-Black pepper
