Food Chain: Penne al Sugo di Salsiccia
For July's Food Chain workshop we'll be joined by Natalia Palombo, director here at Deveron Projects, who'll be sharing a recipe for Penne al Sugo di Salsiccia (or penne al pomodoro (V)). This dish is a delicious mix of sugo and sausages on top of penne pasta, hearty and comforting! The vegetarian option is penne al pomodoro, fresh tomato and basil sauce over penne pasta.
A note from Natalia:
This is a simple dish (which can be made even simpler, really) but a staple in my household growing up. My father is Italian, and being the patriarch, in the late 80s, I'm sure it's no surprise that Italian culture was dominant in our household. My mum quickly adapted and made an exclusively Italian menu throughout our childhood. Those dishes dictated our traditions, with Lasagne at Christmas, Lamb at Easter, never less than three courses on any day, on any occasion ;)
I'd say this is my version of beans on toast, albeit the 'gourmet' version (sometimes I'll make this with just an onion, some garlic, a bit of stock, tomatoes and basil or rosemary, and some parmesan cheese). Comfort food that's also very easy to rustle up if someone comes to visit, which was often! A tomato sugo (sauce) would vary from region to region in Italy, and in some cases, house to house. This was the one in our house (which I've added to a little over the years..).
