Food Chain: Potaje de Vigilia & arroz con leche
At this month's cookery workshop, we tackled some Spanish comfort food classics with Huntly resident and teacher at The Gordon Schools, Joaquin Folgado Casado.Joaquin shared some delicious and nostalgic dishes from his childhood in Spain, starting with a vegetarian version of a popular Spanish stew - Potaje de Vigilia, with spinach, garbanzos (chickpeas) and paprika. Beloved throughout Spain during Lent and Easter, Joaquin describes it as 'the ultimate comfort food on dark, chilly days, bursting with rich flavours and simple to prepare'. For dessert, we whipped up a cherished star treat of Joaquin's childhood and one of the very first desserts he ever made - arroz con leche, or Spanish rice pudding. Both dishes are vegetarian and gluten free, and can be made vegan.
