Food Chain: Russian Borscht

Find Evgeniia's recipe here!A note from Evgeniia - Russian cuisine has a great variety of different dishes, originating from past times and the Soviet Union. I decided to pick a soup, called Borscht (red beet soup), probably one of the most famous representatives of the Russian food abroad. Another reason why I chose this dish for Food Chain – my granny cooked it very tasty when I was a child, and I learned how to make it myself to get nostalgic feelings and share this dish with others. It is especially important now since I am living far away from my relatives.
Even though there are many variations of this soup in Central and Eastern Europe and post-Soviet countries, we were making a traditional version. The recipe includes meat and meat broth, but it can also be made with vegetable broth. Borscht is usually served with sour cream and garlic bread – a perfect healthy and nutritious lunch.
